In almost every city in Iran, there is probably an old ice cream shop whose name everyone knows. A place that has been making traditional Persian ice cream for years, sometimes for generations, and has become so familiar that locals can find it with their eyes closed.

On summer evenings, these ice cream shops become meeting places for young people, families, and passers-by who use the heat of the street as an excuse to stop for a few minutes, stand together, talk, and eat ice cream.

What is interesting is that, despite the many different flavours available, so many people go to these shops for one particular flavour: traditional Persian saffron ice cream, known in Iran as Bastani Sonnati.

This golden-yellow ice cream has been part of Iranian food culture for more than a century. As modern urban life developed, it moved from traditional ice cream shops into everyday life across the country.
It is also closely connected to one of Iran’s most precious agricultural products: saffron, with Iran being the world’s largest producer.

Perhaps no other dessert has brought one of Iran’s most valuable ingredients into people’s everyday lives in such a simple, familiar, and joyful way as Persian saffron ice cream.


An Ice Cream Known for Its Colour and Aroma


In most parts of the world, ice cream is associated with flavours such as vanilla, chocolate, or fruit. Persian saffron ice cream has a different personality. Its identity comes from its colour and aroma.
Before you even take the first spoonful, the fragrance of saffron and rosewater, two aromas that have been part of Persian cooking and confectionery for centuries, reaches you through the noise and heat of the street.
In a way, it reminds you that life still has its own sweetness.
Traditional Persian saffron ice cream is made with saffron, rosewater, pistachios, and sometimes small pieces of frozen cream. The result is cool, fragrant, creamy, and delicate.

And yet, perhaps the most everyday way Iranians enjoy saffron is in a scoop of saffron ice cream.

Here, saffron is no longer reserved for celebrations or formal tables. It becomes accessible and familiar. It is the excuse for an evening walk, a meeting with friends, or a little relief from a hot summer day.
And let us tell you a secret: in Iran, it is very difficult to say no to Persian saffron ice cream.
One of the world’s most precious spices has become, in the form of an ice cream, a shared memory for millions of Iranians.


Persian Saffron Ice Cream at Noush

When we decided to add Persian saffron ice cream to the Noush menu, we had one goal: if someone was trying this Iranian dessert for the first time, we wanted them to experience something as close as possible to the traditional version, but completely plant-based.

We wanted to make vegan ice cream without simply creating something that was inspired by the original. We wanted to start with the traditional recipe and find a way to make it vegan.
At first, we got the recipe from a friend who owns an ice cream shop in Iran. From there, our work began.


We changed the recipe again and again. We tried different plant-based milks, experimented with different creams, adjusted the proportions, and started over many times.
We kept going until we found the texture we were looking for: soft and creamy, with the familiar aroma of saffron and rosewater and that unmistakable feeling of traditional Persian ice cream, but without using any animal ingredients.

Today, one of the questions we hear most often is:
“Is it really vegan?”
And we understand why people ask.
The soft texture, the aroma of saffron and rosewater, and the familiar flavour are so close to traditional Persian ice cream that many people find it difficult to believe there is no dairy in it.

Then usually comes the next question:
“What is it made from?”
You have no idea how happy this question makes us.
It means we have done our job well.
But it also opens the door to a conversation about saffron, ice cream, dessert, vegan food, and the kind of way of eating that inspired us to build Noush in the first place.


The Ice Cream People Come to Noush For


Little by little, Noush’s saffron ice cream found its own way.
We have guests who show us a photo of the ice cream on their phone before they even order their food and say:
“We came here for this.”

Some heard about it from a friend. Others read about it on Google Maps or HappyCow, where someone told them that if they came to Noush, they should not leave without trying the saffron ice cream.
And many people, after tasting it, say the same thing we have heard countless times:
“There is no way this is vegan.”

Perhaps that is the biggest success of this ice cream.
It is not only an experience for vegans. It has become something worth trying for anyone who loves ice cream.
And not just once.
Again and again.

Today, Noush is one of the few restaurants in the world serving traditional Persian saffron ice cream completely plant based.

For us, this ice cream now carries two memories.
One is of the streets of Iran, and the groups of friends who would stop together on a hot summer evening, sitting or standing by the roadside and happily escaping the heat with a scoop of saffron ice cream.
