Vegambas (Meygoo Polo), Memories from the Southern Shores

Meygoo Polo is a dish from the south of Iran, near the Persian gulf. A region where people have long had access to shrimp and a deep love for aromatic, spice-filled cooking. Across the southern coast, every town has its own version, using local herbs and spices that give this dish its soul.
Traditionally, the shrimp are marinated, then cooked and folded into rice, creating a fragrant pilaf full of flavor. The version we make at Noush is inspired by the Khuzestan style, the region one of our families comes from. This dish carries memories of southern gatherings. The excitement when someone arrived from the coast with shrimps as a gift, the joy of family meals, and the comfort of home cooking. For us, Meygoo Polo has always meant guests, celebration, and home.
To make it plant-based, we experimented with mushrooms and tofu, but nothing quite captured the texture and taste. Until we found Vegambas by the Spanish company Veganutrition. The result was so good that guests often ask if we’re sure it’s vegan (we are!).
We serve this beloved dish both as a main for lunch and as a tapas at night, paired with toasted bread.
We weren’t sure at first about adding Meygoo Polo to our menu because of its unique flavor profile. But after a short test period, it became one of our most-loved dishes, now a proud part of Noush.
